• Fresh roast dates — We only work with roasters who ship within days of roasting, not weeks.
• Sourcing transparency — Where are the beans from? What's the processing method? We want roasters who care about the story.
• Shipping reliability — No point recommending a roaster if they take 3 weeks to ship.
